Happy Birthday Elaine!



To celebrate Elaine's birthday we went to PF Chang's last night, along with her aunt, Lindsey. I didn't realize it, but they have a complete gluten-free menu! If you have celiac disease or wheat allergy, it is almost impossible to find places offering gluten-free choices.

Elaine mentioned a family recipe for 'German' Pancakes that sounded so delicious, I want to try it. Elaine learned it from her mother and Lindsey commented that she remembers Elaine's Grandmother making it. Guy argues that it is not authentically German because it doesn't have any lemon juice. I'm sure it's still delicious, regardless of it's origin.

Elaine's Family Pancakes

Make pancakes as you normally would but thin them out a little more with some milk. The point is to make them larger but thinner than you usually would make a pancake. When you have a stack of pancakes ready, use melted butter to coat one side and sprinkle it with sugar. Slice a banana long-ways and put one slice in the center of the pancake. Roll it up and secure it or put a toothpick in it. Drizzle with more melted butter and sugar. Eat the delicious goodness! This sounds like a great Saturday morning breakfast.
